I'm 30 years old and finally working toward reaching my dream job--working with animals. I've almost completed my associates degree and plan on getting a masters in Zoology. The problem is that I don't have any professional experience working with animals, though I have plenty of personal experience throughout my lifetime. Animals have always been my passion, and working with them comes naturally to me. I really need some tips on how to even go about doing a cover letter, that will get attention, even though I don't have the professional experience. Thank you.

Hi Crystal - have you considered volunteering at animal shelters, animal rescue organizations or veterinarians?
I know we have a local group that rescues animals and gets them healthy and then finds homes for them. They need people in many roles.
if you can find an opportunity like this, you can have some fun doing what you love while you help out animals and meet others who love what you do. Plus these folks can provide references for you later on when you want to look for a job.

You didn't mention what your IT skills are. However, I have some experience in consulting and can tell you that SAP skills seem to be very much in demand where I am. Would require travel but some possibility over time to stay local.
