I go to school at a very large public univeristy. When someone sneezes, I keep on writing, discussing, or working on whatever I was doing before. I feel no need to acknowledge it unless they fire off many in a row. At that time, I might inquire whether it's allergies or an illness so I know just how many alcohol wipes I'll be using on my desk, books, and personal belongings. Of course, if I just have to say something, "May the force be with you" seems appropriate enough.
