Does anyone know if I can substitute Splenda or another sugar substitute for a diabetic person?

You can use Splenda for baking. I just advise using a about 1/3 less than the recipe calls for or the cookies end up tasting like they have nutrasweet in them. Yuck! If you use the 1/3 less it comes out tasting pretty much like you used sugar without the damage.

Wow! There are other cookie addicts besides me?? Yay! Glad to see I'm not alone in this addiction, either.

I love making cookies, I collect recipes. My favorite time to make cookies is Christmas, because it becomes a family tradition and a friends get-together.

I also like to create my own cookies recipes. I made a"healthy" version of oatmeal cookies for a friend's birthday. I substituted applesauce for the oil, used half the sugar and made it brown instead of white, and added triple the spices called for and added more, such as cloves (my favorite spice), cinnamon and nutmeg. Everyone absolutely loved them!
