Round I
You have a table in front of you on which is displayed generous amounts of the following:
Salts (iodized, sea, kosher)
Pepper (black, white, cayenne, ground red, )
Peppers (jalapeno's, greek, sweet bell)
Onions (white, yellow, red, green
Assorted seasonings (cumin, chili powder, oregano, bay, thyme, basil, etc.)
Milk & Cream (vitamin D, soy, whipping cream, )
Butter ( salted, unsalted, margarine)
Oil (canola, peanut, shortening, vegetable, Extra Virgin)
Eggs (farm fresh grade AA)
Flour, meals, grains (all-purpose, self rising, wheat, semolina, corn meal, corn flour, oatmeal)
Misc (baking soda, baking powder, yeast)
Asstd Fruits (apples, strawberries. cantaloupe, grapes, kiwi's. lemons, limes, oranges, banana's)
Asstd Vegetables ( green beans,unshucked corn on cob, greens, salad type greens, carrots)
Breads - whole loaves & rolls, unsliced (French, Italian, wheat, pumpernickel, hoagi rolls, buns, bagels, Pita)
Cheeses (Feta, Brie, Cheddar, Parmigiano, Pecorino, Swiss, Asiago, Provolone, Monterrey jack)
Sour cream, cottage cheese, ricotta cheese, cream cheese
Basically, you have in front of you a variety of what most people would have at least some of in their pantry and refrigerator.
If you don't see a particular item, but would normally have it in your pantry or fridge, then you can pretend it's there for purposes of the competition. We won't nit-pick if your recipe calls for radicchio.
MISSION: You will create a menu for one day for an 'empty nester' - one or two people. Your menu must include 2 course breakfast, 2 course lunch, and a 3 course dinner. Beverages do not count as a course. Extra credit will be given extra courses, however, consider the judging criteria before deciding to add additional courses.
Judging criteria:
1. Simplicity - Even though we're retired, we don't want to spend all freakin' day in the kitchen do we? No, our feet can't take it anymore. Each meal should take no more than 45 minutes to prepare. The quicker the better. Simple is better. A dish with 20 ingredients id complex and difficult. A few simple flavors is best. 20%
2. Easy clean-up. Minimize pots & pans. You could just use crockpot's but it may hurt you on creativity. 10%
3. Taste - It must sound like it tastes good. Peanut butter, shrimp, and Feta cheese might be one of your favorites, but chances are you are alone in that opinion. 25%
4. Creativity - If it's something we've all seen and eaten a million times then you won't score high here. Creativity can also mean resourcefulness. 25%
5. Resourcefulness - Using ingredients in unique ways that minimizes different ingredients and prep work, or shows creativity by using items in unique ways. 20%
