Here's a superb family recipe made from Salmon, Potatoes and Onions. It's healthy, low in sodium, and chock full of yummy. My Grandma is from Canada and this is one of the best foods hot or cold, that I have ever tasted.
Although I've never had to watch my diet in terms of weight control, I do pay attention to what I eat, and that is why my Cholesterol and Blood Sugar is great. I read labels!
Grandma Hodgins Salmon Pie
Ingredients:
1 6oz. can Red Salmon (recommended)
4 cups cubed boiled potatoes
1 very large green onion (size of male fist)
1 9" deep dish pie crust (upper and lower)
Set oven to bake at 400 degrees.
Measure 4 cups of pealed potatoes that have been cut into small cubes, and boil until done, set aside.
Skin onion, chop into very small pieces, and sautée onions until dark golden brown in pan.
Meanwhile, In a large mixing bowl dump the salmon from the can, juices and all. Remove only the salmon skin and bone. Crumble salmon, then add the boiled potatoes and onions.
Mash them all together until you have them homogenized.
Place mixture into your deep dish pie crust, and pat it down.
Add top crust and press edges down with a fork dipped in water.
Fix any crust cracks and make 3 slits in top.
Bake in center of oven for about 1 hour, or until crust is lightly brown.
Remove and let sit for 15 minutes (will be hot).
You're done!
Garnish with salt and pepper.

Enjoy hot or cold, great just cutting a slice and popping it in the microwave.
