Roasting peppers on a flat top electric stove probably yields the best result I've ever had. Slice the peppers so that they lay flat against the glass element. (Make sure the heat is on hi, and well primed before you start. You can press the peppers down with a spatula. Remove and cool when the skins are black. When cooled, the skins will peel back easily and the fruit will be relatively crisp. Serve with olive oil, bread, roasted garlic and rosemary.
