Hi, and welcome to the Culinary Group! I'm your host, KenWritez. I'm not a chef but I love to prepare good food as skillfully and creatively as I can.
I confess: I'm a cookbook junkie: Julia Child, Gordon Ramsay, Patricia Wells, Emeril, Ming Tsai, Anthony Bourdain, Rick Bayless, Alton Brown, Cook's Illustrated, my mom and my brother. I troll the Internet as well: chow.com, egullet.com, rouxbe.com. I amass recipes like a miser amasses gold coins,
The above authors all have homes on my bookshelf and the above websites are all in my Favorites list. I like to read through the recipes, deconstruct them and teach myself how they're built. That way I learn why certain flavorings are used with specific meat, vegetables, fruit, or grain. What techniques (chiffonade, whisking, clarifying butter, deep-frying, emincé, brasing vs. roasting--you get the idea.)
I have a bit of knowledge yet there's much, much more I don't know. I hope other people will join this group and together, we can teach each other what we know and raise the bar for good food in our homes and in our areas: Life's too short to eat bad food!
To keep posts easy to find, I've set up threads. Thus, recipes go in the recipe thread, favorite food web sites go in the Links / Resources etc.
As a side note, please keep the funny pictures and jokes to a minimum.
As the group matures, I'll compile a FAQ list for it and post it here.
