Go to Amazon immediately and pick up America's Test Kitchen's Special Fast and Fresh Booklet -- it's a "magazine" with 30-minute meals in the form of recipe cards (you know, like what Martha Stewart does in her mag? but a whole booklet of recipes). I got it at Borders two weeks ago, tried two recipes in there... and they were both terrific. Lots of easy chicken recipes that kids will eat... and plenty of stuff for adults too. We tried the chicken lettuce wraps over the weekend and it was GREAT. Cuz if you read Cook's Illustrated, you know these people do their research!

Joy of Cooking! We have an old one. I love it because it digresses and gives me ideas. My wife hates it because of the digression. Go figure!

Thanks for the suggestions. I picked up a version of the America's Test Kitchen recipes at Safeway today and plan to test a few out.
My criteria for buying a cookbook is that it needs to have compelling visuals (even though How to Cook Everything has zero pictures). The pictures inspire me to try a dish.

Cooks Illustrated, magazines and cookbooks. They not only have great recipes, but its chock full of tips, easier ways to do things, and my favorite, explanations of what makes recipes work (or fall). Totally appeals to the curious cook, and the more understand the whys of things the more I can veer off from recipes to create my own variations.

I spent years working in the cookbook industry (I attibute at least 10 lbs to that job!) and have a few favorites. Sunset's All Time Favorites (full disclosure - I used to work there) is great - best appetizers ever. For the slow cooker "Not Your Mother's Slow Cooker Cookbook" doesn't have one recipe that includes a can of cream of mushroom soup (woo-hoo!). And I love any book written by Nigella Lawson or Ina Garten. Lastly, I love, love, love the original gigantic "Martha Stewart Cookbook." Every recipe has about 100 ingredients and a million steps, but I've pared quite a few down to be doable in a short timeframe. Try the classic caesar salad and any recipe for potatoes.
