My youngest, who became a great eater when she was 8 has gone off to college. My spouse spends almost half of the year working on the opposite coast. I love to cook, but cooking for one or two is a decided change in routine. My strategies:
fewer baked goods to reduce calories
more soups and salads, which can double as the next day's lunch at the office
dahl with rice and yogurt--cheap comfort food and healthy!
market style shopping: I am not the Mom with the full cart anymore and I don't make long lists. I buy when I need things and usually shop at a smaller markets
saving my "must try" recipes for the weekends when I have more time
What are your strategies?
