I love simplicity. This is quick, easy and the family loves it on hot summer days.
Prep Time: 25 min.
Chill Time: 3 hr.
Ingredients:
1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Cream of Celery Soup
1/2 cup plain low-fat yogurt
1/4 cup water
2 tbsp. Dijon-style mustard
1 tbsp. vinegar
1/8 tsp. ground black pepper
4 cups corkscrew-shaped pasta, cooked without salt
2 stalks celery, sliced (about 1 cup)
1 cup diced tomato
2 cups cubed cooked chicken
Directions:
Stir the soup, yogurt, water, mustard, vinegar and pepper with a whisk or fork in a large bowl. Add the pasta, celery, tomato and chicken, tossing until well coated.
Cover and refrigerate the salad for at least 3 hours. Stir the salad before serving.
Substitution Tip: Substitute 1/2 cup dried cranberries for the tomato.
Tip: Recipe may be doubled.
Serves 6.
You can use leftover chicken, store-bought rotisserie chicken or Swanson® Premium Chunk Chicken for this recipe.
